Make the Dressing: Whisk together the mango juice, olive oil, apple cider vinegar, garlic, and lime juice in a small bowl. Add salt and pepper to taste.
Warm black beans in a pot over low heat. Add cumin, olive oil, and garlic powder and simmer for about ten minutes, stirring frequently. Cover and remove from heat.
Prepare rice per package instructions and divide between four bowls.
Spoon black beans over top. Add chopped avocado and cashews over each portion, then drizzle mango dressing over each and mix.
Fry four eggs, seasoning with salt and pepper, then place atop each bowl. Enjoy!
