Blueberry Muffins for Mom

  1. Preheat oven to 350 degrees F.
  2. Mix flour, baking powder, 1 tsp cinnamon, and salt together in a bowl.
  3. In a separate larger bowl, whisk the eggs and applesauce together, then stir in the honey and vanilla.
  4. Add the flour mixture to the egg mixture and stir until just moistened. Fold in the blueberries until combined, then pour batter into pre-greased muffins tins.
  5. In a small bowl, toss together the pecans, oats, and 1 Tbsp cinnamon. Generously sprinkle this mixture over each muffin, then bake for 30 minutes or until a knife entered into the center of the muffins comes out clean. Serve to Mom with a smile!
