Let's Do This!
Step 1:
Put 18 golden sandwich cookies into a plastic freezer bag and smash them with a rolling pin or heavy object to make small crumbs.
Pour the cookie crumbs into a bowl.
Step 2:
Cut a block of room-temperature cream cheese in half. You will need 4 oz. for the recipe.
Cut the 4 oz. block of cream cheese into quarters.
Add the four quarters of cream cheese to the bowl with the cookie crumbs.
Step 3:
Mix the cream cheese and cookie crumbs together to make batter. Tip: You may want to use your hands to mix the batter together.
Add two drops of pink or blue food coloring to the batter and mix. Note: Add more food coloring for a brighter mixture.
Step 4:
Use a cookie scoop to create ball shapes from the batter. Place the cake pop balls on a parchment-lined surface.
Freeze the cake pop balls for 15 minutes.
Remove the cake pop balls from the freezer and roll each one to make a smooth, round shape.
Insert treat sticks into the cake pop balls and freeze for 30 minutes.
Step 5:
In a bowl, microwave 2 bags of light cocoa melting wafers on high for 30 seconds.
Stir chocolate, and then microwave in 30-second intervals until chocolate is completely melted.
Step 6:
Dip chilled cake pops into the melted chocolate to cover the ball completely. Use a spoon to dab extra chocolate near treat stick, if needed.
Place the dipped cake pops on a parchment-covered surface.
Step 7:
In a bowl, microwave white chocolate melting wafers on high for 30 seconds.
Stir chocolate, and then microwave in 30-second intervals until chocolate is completely melted.
Step 8:
Use a spoon to drizzle white chocolate onto the chocolate-covered cake pop balls. Refrigerate when done.
