Preheat oven to 400 degrees. Line a large baking sheet with parchment paper, then use cooking spray to coat. Combine all nuts in a large bowl, then toss in egg white. Add half (⅛ cup) of brown sugar and half (⅛ cup) of white sugar and mix well. Spread nut mixture evenly over pan. Sprinkle cinnamon (to taste) then remaining sugars over nuts. Place in oven and bake 15 minutes on a low rack, until nuts are toasted and fragrant.
