Give classic mashed potatoes an updated twist with this super-flavorful version inspired by French onion soup. Unsurprisingly, a generous handful of shredded Gruyère cheese makes rich, fluffy mashed potatoes even more irresistible, and the Clover Valley® Sliced Potatoes make it easier than ever to make in a pinch.
FOR THE MASHED POTATOES:
Freshly ground black pepper
FOR THE CARAMELIZED ONIONS:
Step 1: Make mashed potatoes: In a large pot of salted boiling water over medium heat, boil Clover Valley® Sliced Potatoes until tender, 12 to 15 minutes. Drain and mash slightly.
Step 2: In a medium heat-proof bowl, microwave Clover Valley® butter, Clover Valley® half-and-half, and Clover Valley® milk until almost scalded, about 2 minutes, checking every 30 seconds. Add milk mixture to potatoes and continue to mash until smooth. Add Gruyère and stir until melted, then add more salt and pepper to taste.
Step 3: Make caramelized onions: In a large cast iron pan over medium-high heat, heat the onions and 1 cup of the broth until simmering. Continue cooking until very little liquid remains, about 10 minutes
Step 4: Once onions have cooked down, add butter to the skillet and sauté, stirring frequently, until butter has browned. Stir in the thyme and Clover Valley® all-purpose flour, then add remaining ½ cup of broth and stir to combine.
Step 5: Serve mashed potatoes with a spoonful of onions on top, and garnish with more fresh thyme leaves.

Use low-sodium beef broth to reduce the overall sodium in your dish, and use fat free, 1%, or plant-based milk to cut down on fat. Consider using olive oil in place of butter, and garnish the dish with toasted walnuts or pecans for a little extra fiber.
