Ingredients
  1. In a large skillet over medium heat, sauté ground beef 5 to 7 minutes or until browned, stirring occasionally; drain off excess liquid. 
  2. Add mixed vegetables, gravy, onion powder, and pepper to beef and cook 6 to 8 minutes, or until heated through, stirring occasionally.
  3. Remove from heat and top with 5 dollops of potatoes to form ghost shapes. (See photo.) Place 2 reserved peas in each dollop of potatoes to form eyes. Serve immediately.

Better-for-You Tip: To make ghost shapes, carefully (since they’ll be hot) place mashed potatoes in a resealable plastic bag and cut a 1/2-inch piece from bottom corner of bag. Squeeze bag to pipe potatoes into ghosts. Not only are our ghostly additions adorable, they also allow us to greatly reduce the amount of potatoes we use to top the Shepherd’s pie. That mean less calories and carbs, and more protein and veggies. Oh, and don’t forget to drain off the pan drippings after cooking the beef, as it will reduce up to 40% of the saturated fat.
