Easy Vegetable Quiche

  1. Preheat oven to 375 degrees F.
  2. Line a pie pan with one pie crust, place on a cookie sheet, and set aside.
  3. In a large bowl, whisk together eggs and milk. Add dijon mustard, onion powder, salt and pepper, and whisk until smooth. Stir in chopped bell pepper and mushrooms, then fold in the cheese.
  4. Pour egg filling into pie crust, then bake for 1 hour or until filling is set. If pie crust edges begin to brown, place a piece of foil over the quiche while it bakes.
  5. Let cool, then slice and serve!

Tip: Have extra filling that will not fit into your pie pan? Pour into muffin cups and bake for mini quiche bites!
