  1. Preheat oven to 375 degrees F. Coat a 7- x 11-inch baking dish with cooking spray. 
  2. Place bacon on a rimmed baking sheet and cook for 15 to 20 minutes or until crispy. Let cool slightly, then coarsely chop;  set aside.
  3. Meanwhile, in a large bowl, whisk eggs, milk, cottage cheese, onion powder, and black pepper. Stir in broccoli, cheddar cheese, and bacon pieces; mix well. Pour mixture into baking dish.
  4. Bake 30 to 35 minutes or until set in center. Let sit 5 minutes, then cut into 12 pieces and serve.

That’s why we used low-fat dairy options, added lots of broccoli, and reduced the cheese to less than half in our crustless quiche. The only thing we didn’t cut back on was the yum-factor.
