South of the Border French Toast Recipe

Prep: 10 min.
Total: 25 min.
  1. In a medium bowl, whisk eggs, milk, granulated sugar, cinnamon, and vanilla until well blended.
  2. Cut each tortilla into quarters then place in egg mixture. Allow it to soak up the egg mixture (2-3 minutes) then flip it, so that it absorbs the egg mixture on the other side (like you would do when making traditional French toast).
  3. Coat a large skillet with cooking spray and heat over medium heat. Add 4 tortilla quarters and cook 3 to 5 minutes or until golden, turning halfway through cooking.
  4. Remove to a platter and repeat with cooking spray and remaining tortillas. Serve topped with mixed berries and powdered sugar, if desired.

Better-for-You Tip: We took everything your love about French toast and gave it a better-for-you south-of-the-border twist. Plus, since the tortillas are packed with protein and have about half the carbs of traditional sliced white bread, we can’t miss. We also found that the colorful berries are a fresh-tasting alternative, rather than high-fructose-laden pancake syrup, which makes it both kid- and adult-friendly.
