One Pot Broccoli Mac & Cheese

Ingredients

Melty cheddar cheese and broccoli are a dynamic duo that can help some of the most veggie-averse eat their greens. We doubt you'll need to convince anyone to try this creamy three-cheese mac, flavored with plenty of dry spices and speckled with bright green crisp-tender broccoli florets.

Step 1: In a large pot of salted boiling water over medium heat, blanch fresh or frozen broccoli until bright green, 2 to 4 minutes. Remove broccoli with a sieve or spider and set aside.

Step 2: Add pasta to boiling water and cook until al dente, about 8 minutes. Reserve 1 cup pasta water, then drain pasta and return to pot.

Step 3: Heat the milk and half and half in the microwave, checking every 30 seconds, until almost scalded, about 1 ½ to 2 minutes.

Step 4: Return pot with cooked pasta to medium heat, then add the butter and spices. Once the butter has melted, stir in the flour, then add milk and cheese while stirring. Stir in half the pasta water, then keep stirring until cheese is melted and sauce is creamy and thick. Stir in reserved broccoli, and add in more pasta water if needed.
