Ingredients
  1. Preheat oven to 375 degrees F. Coat an 8-inch-square baking dish with cooking spray.
  2. In a food processor, combine oats, 3/4 cup flour, brown sugar, salt, oil, 2 tablespoons orange juice, and vanilla. Pulse until combined and crumbly. 
  3. Remove 3/4 cup mixture and set aside for topping. Press remaining mixture into bottom of prepared baking dish.
  4. In a medium bowl, combine granulated sugar, remaining 1 tablespoon flour, blueberries, and remaining 1 tablespoon orange juice; mix well. Spoon mixture over crust, then sprinkle reserved crumb mixture over blueberries.
  5. Bake 30 to 35 minutes or until golden brown and bubbly around edges. Let cool, then cut into 12 bars.

Better-for-You Tip: Here we substituted more than half of the flour with fiber-packed oats and replaced the butter with a bit of canola oil as a way to reduce the saturated fat. Plus canola oil contains the lowest level of saturated fatty acids of any vegetable oil. Top all that off with the fact that blueberries are consistently touted by many of the top research facilities as a way to aid in reducing the risk of heart disease, lower blood pressure, and promoting digestive health.
