    Pumpkin Muffins

    Ingredients
    • 1-1/4 cup Clover Valley® Granulated Sugar
    • 1 cup Clover Valley® Pure Pumpkin
    • 1/2 cup Clover Valley® Vegetable Oil
    • 1/4 cup Clover Valley® Apple Juice
    • 2 Clover Valley® Large Eggs
    • 1-1/2 cup Clover Valley® All-Purpose Flour
    • 1/2 tsp. Clover Valley® Baking Soda
    • 3/4 tsp. Clover Valley® Salt
    • 1 tsp. Clover Valley® Baking Powder
    • 2-1/4 tsp. Clover Valley® Pumpkin Pie Spice
    1. Mix 1-1/4 cup sugar with 1 cup pumpkin.
    2. Add 1/2 C. oil and 1/4 C. apple juice.
    3. Add 2 large eggs.
    4. Whisk together for 20 seconds and set aside.
    5. In a separate bowl, whisk together dry ingredients.
    6. Combine pumpkin mixture with dry ingredients, whisking until mixture has small lumps. Do not overmix.
    7. Add cupcake liners to muffin tin.
    8. Fill each liner approximately 3/4 full with mixture.
    9. Bake at 350° for 20-25 minutes.
