Pumpkin Chai Muffins for Fall with Country Crock®

When the weather starts turning colder, it makes us all crave something warm, buttery, and delicious. Today, with the help of Country Crock®, I am going to be sharing one of our family-favorite recipes: Pumpkin Chai Muffins. These muffins are packed with the flavor of fall and go perfectly with any cup of coffee or holiday celebration.

One of the ingredients that makes these muffins so delicious is Country Crock®. We love using Country Crock for a rich, creamy, and buttery taste. Country Crock is slow-churned in Kansas and is great for spreading, topping, and cooking. It’s also made with simple farm-grown ingredients free of any artificial flavors and preservatives and taste amazing!

I love cooking and using Country Crock® because it reminds me of my childhood. My mom always had Country Crock® in her fridge and we topped everything from toast to corn to muffins. It’s such a fond memory that I carry with me and think about every time I make this recipe.

So let’s jump into the recipe.



For the muffins:

2 cups Clover Valley® Flour

¼ tsp Clover Valley® Salt

1 tsp Clover Valley® Baking Soda

1/2 tsp Clover Valley® Baking Powder 2 tsp Clover Valley® Ground Cinnamon 1/2 tsp Allspice

1/4 tsp Ground Nutmeg 1/8 tsp Ground Cloves

1/4 tsp Ground Cardamom 1/4 tsp Ground Ginger

1/2 cup Country Crock® Original Spread 1/2 cup Clover Valley® Granulated Sugar

1/2 cup Clover Valley® Brown Sugar 2 Eggs

2  Tbsp Clover Valley® Vegetable Oil 2 tsp Vanilla Extract

1  cup Pure Pumpkin Puree, make sure it is not pumpkin pie filling

Spiced Crumble topping:

2  Tbsp Clover Valey® Brown Sugar

2 Tbsp Clover Valley® Granulated Sugar 1 tsp Clover Valley® Ground Cinnamon Pinch of Allspice

Pinch of Ground Ginger Pinch of Cardamom

¾ cup of Clover Valley® Flour

¼ cup Country Crock® Original Spread


Preheat the oven to 350 degrees. Place cupcake liners into a 12-cup muffin tin.

In a medium bowl, whisk together the dry ingredients for the muffins. Set aside.

Using a stand mixer with a paddle attachment, beat together the Country Crock, white sugar, and brown sugar until light and fluffy. Scrape the bowl, ensuring that all the sugar is mixed in completely. Beat additional 30 seconds if necessary. Beat in one egg at a time, with at least 30 seconds in between additions. Mix in remaining wet ingredients, until completely combined. With the mixer on low speed, add in the dry ingredients one cup at a time, mixing until the batter is just combined. Do not over mix.

Divide the batter into the muffin tin. To keep them consistent in size, I like to use a large cookie scoop!

In a medium bowl, stir together the crumble topping ingredients. I use a fork, but you may need to use your hands to combine it entirely. Break apart the extra-large pieces. Sprinkle it evenly on top of the muffins.

Bake for 20-25 minutes or until a toothpick inserted into the middle comes out clean. Allow to cool in the pan for 10 minutes, then remove and allow to cool completely on a wire rack.

Or you can eat them while they are fresh and hot like I do!
